**Mix & Rest**: In a large mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for about 5 minutes until foamy.
**Knead Dough**: Add 3 cups of bread flour and salt to the yeast mixture. Stir until a dough forms, then knead on a lightly floured surface for about 10 minutes until smooth and elastic.
**First Rise**: Place the dough in a lightly greased bowl, cover with plastic wrap, and let it rise in a warm place for 1-2 hours, or until doubled in size.
**Shape Bagels**: Punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball, then poke a hole through the center with your finger and widen it to about 1.5-2 inches.
**Second Rise**: Place the shaped bagels on a parchment-lined baking sheet, cover with a damp cloth, and let them rest for about 10 minutes.
**Boil**: Preheat your oven to 425°F (220°C). Bring a large pot of water to a boil and add a tablespoon of sugar. Boil the bagels, 2-3 at a time, for 1 minute on each side.
