Ingredients

  • 1 1/2 cups warm water 110°F/45°C
  • 2 teaspoons sugar
  • 1 packet 2 1/4 teaspoons active dry or instant yeast
  • 4 1/2 cups bread flour
  • 2 teaspoons salt
  • Optional toppings: sesame seeds poppy seeds, etc.

  • **Mix & Rest**: In a large mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for about 5 minutes until foamy.
  • **Knead Dough**: Add 3 cups of bread flour and salt to the yeast mixture. Stir until a dough forms, then knead on a lightly floured surface for about 10 minutes until smooth and elastic.
  • **First Rise**: Place the dough in a lightly greased bowl, cover with plastic wrap, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  • **Shape Bagels**: Punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball, then poke a hole through the center with your finger and widen it to about 1.5-2 inches.
  • **Second Rise**: Place the shaped bagels on a parchment-lined baking sheet, cover with a damp cloth, and let them rest for about 10 minutes.
